Potluck Chicken Casserole

This makes enough to feed a lot of people...10-12 actually. So I normally cut it in half.

Ingredients

  • 8 cups cubed, cooked chicken
  • 2 cans (10-3/4 ounces) cream of chicken soup I use Pacific brand because it's gluten free
  • 1 cup sour cream
  • 1 cup Ritz crackers I use orginal Glutino crackers
  • 2 tablespoons melted butter or margarine
  • 1 teaspoon celery seed
  • Fresh parsley and sweet pepper rings are optional

Directions

Combine chicken soup and sour cream, spread into a greased 13 X 9 inch baking dish. Combine Cracker crumbs, butter and celery seed; sprinkle over chicken mixture. Bake, uncovered at 350 degrees for 30-35 minutes, or until bubbly. Garnish with parsley and red pepper if desired.
