This soup is great with a loaf of French bread!

Ingredients
- 1 pound Italian sausage I use Falls brand and I get the mild
- 2 medium onions, chopped
- 6 clove garlic I use the convient stuff in the jar
- 1 pound cooked chicken breasts these need to be cut up in 1-inch cubes
- 2 cans cannellini or white kidney beans 15 oz cans and they need to be drained
- 2 cans chicken broth
- 2 cans diced tomatoes do not drain these
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 6 cups fresh spinach leaves
Directions
In a Dutch Oven or soup kettle, cook sausage over medium heat until no longer pink; drain. Add onions and garlic ‘saute until tender. Add chicken;cook and stir until no longer pink. Stir in the beans, broth, tomatoes, basil and oregano. Cook, uncovered for 10 minutes. Add the spinach and heat just until wilted. Serve with Parmesan cheese if desired.
