Ingredients
- 1 cup chopped onion
- 2 tablespoons cooking oil
- 2 tablespoons Taco seasonings Simply Organic is gluten free
- 1 3/4 teaspoons chili powder McCormick is gluten free
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 3 cans Cream of Mushroom soup I use Pacific Brand because it's gluten free
- 1 1/2 cups sour cream
- 3 cups cubed chicken
- 6-8 tortillas Our favorite are the Don Pancho Gluten Free Wraps
- 1 cup Monterey Jack Cheese
Directions
Saute onion in oil until tender but not brown. Add seasonings, cream of mushroom soup and sour cream. Heat and stir till smooth and warm. Add chicken. In 9X13 pan tear up bite size chucks of half of the tortillas and spread over bottom of pan. Spread half of the schicken mixture on top of the torn up tortillas. Then add other half of torn up tortillas. Then cover with other half of chicken mixture. Sprinkle with cheese. Bake until hot.
