Ingredients
- 3 ripe bananas
- 1 cup sugar
- 2 eggs
- 1/4 teaspoon salt
- 1 teaspoon rounded baking soda
- 2 cups gluten free flour I used Tom Sawyer all purpose flour
- 1/2 cup butter This is equal to 1 cube butter or margarine
- 1 cup nuts optional
Directions
Mix well your ripe bananas with a hand blender, then add your sugar, eggs, salt and baking soda, mix well. Then add flour and your melted margarine and blend some more. You can add your nuts now if you want (I love it with nuts, but my kids don’t [they don't like nuts...go figure]). Pour into a greased loaf pan (I like to use small loaf pans). An option that makes it real good is I top it with 2 Tablespoons flour (gluten free of course), 2 Tablespoons sugar and 1 Tablespoon butter, mix with your fingers until crumbly and sprinkle it on top of your bread before baking. (the topping should doubled if you are using small loaf pans)
Bake at 350 degrees for 1 hour…or until done. Put out on racks soon after you pull it out of the oven.
